THE TRADITIONAL RECIPE
VARIETY: Assyrtiko 90 % with a splash of Athiri and Aidani
SOURCE OF GRAPES: Grapes were sourced from old vines reaching 150 years of age planted in volcanic soils with elements of schist and stones in the villages of Pyrgos, Exo Gonia and Megalochori.
WINEMAKING: Classic white vinification at controlled temperatures followed by maturation on the fine lees and battonage for about 2 months.
TASTING NOTE: Elegant, yet ripe nose with pears and minerals that are combined with floral and yeasty notes. Fresh, vivid and well balanced on the palate with depth of fruit and many layers of flavours.
AGEING POTENTIAL: Up to 5 years from the vintage
SERVED: Decanting is suggested. Drink at 8-10°C.
FOOD AND WINE PAIR: A delicious match with fish tartar or briney “dolmades” with lemony avgolemono, shrimps, crawfish or grilled octopus, fried or grilled fish and seafood delicacies.
