A GREAT INTRODUCTION TO SANTORINI’S MAGICAL TERROIR
VARIETY: Assyrtiko 100 %
SOURCE OF GRAPES: Grapes are sourced from relatively young vines in regard to Santorini’s centenarian vines, with average 50 years of age. These are planted in the island’s volcanic soils with elements of schist and stones in the lower parts of Santorini more particularly in the villages of Kamari, Messaria, Vourvoulos, Akrotiri and Megalochori.
WINEMAKING: Classic white vinification at controlled low temperatures followed by maturation on the fine lees and batonnage for about 2 months.
TASTING NOTE: Fruity nose with ripe apple and citrus elements, combined with mineral undertones reminiscent of gunflint. Lovely texture, with elevated acidity, backed up by fruit-extract and great balance between primary and developing character on the palate. Mellow, yet quite complex aftertaste.
AGEING POTENTIAL: Up to 3 years from the vintage
SERVED: Drink at 10-12°C.
FOOD AND WINE PAIR: A delicious match with Aegean seafood delicacies, fried fish and raw of lightly cooked fish.
