SANTORINI’S WINE HERITAGE
VARIETY: Assyrtiko 85% with 15% Aidani
SOURCE OF GRAPES: Grapes were sourced from old vines averaging 100 years of age planted in the volcanic, stony soils of Megalochori, Pyrgos and Akrotiri villages at an altitude up to 400 m.
WINEMAKING: The grapes are left traditionally to sun-dry for two weeks, to concentrate sugar, acidity levels and flavors. Fermentation follows and maturation takes place in new, second and third use barriques for 90months.
TASTING NOTE: Dense and complex aromas of dried fruits, chocolate, caramel, espresso coffee and walnuts. Luscious on the palate, yet not cloying with “kicking” acidity levels. Exuberant and complex lingering finish. This mahogany colored wine-elixir concentrates all the special traits of Santorini’s unique terroir.
AGEING POTENTIAL: 10+ years after bottling
SERVED: Drink cold at 6-8°C.
FOOD AND WINE PAIR: You can enjoy it on its own after a lovely lunch or dinner. But it will be a heavenly-made pairing with chocolate desserts, crème brulee and greek “baklava”. It will also greatly withstand the antithesis of serving it next to savoury dishes such as Roquefort-like cheeses, quiche lorraine tarts and prosciutto with figs.
